glass: collins - rimmed with kosher salt
2 oz reposado tequila
1.5 oz strawberry cucumber shrub*
finn river habenero cider
-fill glass with ice. slide in 2 slices of cucumber. add tequila & shrub, then fill with cider.
garnish with mint tip and split strawberry
Strawberry cucumber shrub
3 qts strawberries . hulled & split lengthwise
.75 cup white sugar
1 cup lemongrass mint white balsamic
6 slices of cucumber
hull and split strawberries lengthwise. toss in sugar and half of the vinegar.
cover and allow to sit in refrigerator for at least 4 hours.
use the berries and some of the syrup for shortcake
strain off the rest of the syrup and add cucumber slices
allow to sit in refrigerator at least for one day (will hold for a week or so)
-the cucumber slices make incredibly interesting & tasy pickles
